Sourdough

Many people enjoy the tangy flavor and chewy texture of sourdough bread. You may not be aware of the surprising health benefits of sourdough. Sourdough is traditionally made by fermenting flour and water for leavening rather than using yeast. This fermentation process helps make calcium, phosphorous, and iron more available to the body. This fermentation process can also create prebiotic and probiotic properties, which is important for gut health. Another benefit is the fermentation process actually alters the enzymes in the wheat and may make digesting gluten easier. Sourdough is versatile and can be used in other recipes as well, including pancakes, English muffins, and bagels.
